Observation: Hot holding unit temperature gauge set below 160F. This was increased at time of inspection. Operator states food items were placed in about 45 minutes ago.

Correction: Verify that unit is capable of hot holding items at >60c. Unit cannot be used if it is not capable of hot holding >60c.
