Notes
-all handsinks are equiped with hot/cold water, soap, paper towels
-quinoa hot held @ 64 deg. C, soups hot held @ 70 deg. C
-all coolers are <=4 deg. C (salad prep coolers, beverage coolers & walk in cooler)
-no evidence of pests noted during inspection
-all food is well protected (off the ground, covered)
-general sanitation is satisfactory
-manual ware washing procedures were demonstrated correctly. Quats sanitizer bucket @ 200 ppm
-noodles were soaked with hot water for 40 mins, temp @ 50 deg. C. *Follow food safety plan, use ice water bath to quickly cool noodles.
