Observation (CORRECTED DURING INSPECTION): Both prep coolers previously identified in routine inspection are still not maintaining foods at 4C. internal temperatures of various foods in prep coolers were between 5.9 - 7.3C at time of inspection.
Corrective Action(s): Remove all potentially hazardous foods in the bottom of the prep cooler into other coolers maintaining 4C. Prepare an icebath for inserts.

Do not restock this cooler until a follow up inspection has been completed showing the cooler is capable of maintaining foods at 4C or below.

Observation (CORRECTED DURING INSPECTION): Staff stated powdered diversol is being used as a no-rinse sanitizer. Also, no sanitizer prepared at time of inspection. Quats dispenser is still at 0ppm
Corrective Action(s): Diversol product requires a rinse of potable water after use. Sanitizers in the kitchen are to be a No rinse sanitizer.

Staff prepared sanitizer using liquid bleach to a 100ppm Cl solution. Ensure sanitizer is always prepared and available for use.

** Choose which sanitizer you would like to use (Quats or Bleach).
-- If you choose to use Quats - service the dispenser to ensure a 200ppm Quats solution. Also obtain test strips for Quats.

-- If you to use Bleach - obtain Chlorine test strips to verify a 100ppm Cl solution.
