General sanitation is satisfactory. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Hot-holding measures > 60 C. Spray sanitizer measures 200 ppm Q. Dishwasher final rinse residual measures 100 ppm Cl. No evidence of pests.

Ensure that the ice-machine's internal water processing parts and plumbing receives a thorough CIP (Clean In Place) procedure on a regular basis, to maintain plumbing and water processing parts clear of mould and sludge build-up.
