General sanitation is satisfactory Hot and cold running water was available Liquid soap and paper towel were present at kitchen and servery handwash stations and in washrooms. Walk-in cooler was at 4C Walk-in freezer was at -16C Line coolers were 4C or colder. Thermometers present in coolers. Cooler/freezer temperatures are monitored and recorded daily. Hot holding of hollandaise sauce was 63C 50ppm chlorine residual detected on dishes after final rinse of the dishwasher. Ensure chlorine level is checked daily with test strips. Quats sanitizer present in spray bottles for sanitizing food contact surfaces. No signs of pest activity noted.
