Observation (CORRECTED DURING INSPECTION): 1) Raw meat stored above ready to eat food in prep cooler.
2) Container of sugar/flour left uncovered in the dry storage room.
Corrective Action(s): Ensure all raw meat/seafood are stored below and away from ready to eat foods.
Ensure all foods are stored in and covered with food grade materials at all times.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed from the back storage area, as well as in the corner of middle storage area. Pest control company contracted for monthly visits. Report checked at this time.
Corrective Action(s): Ensure to monitor for droppings every morning and remove them. Treat the areas using 1000ppm chlorine (1:50 bleach:water).

Observation: Floors underneath dishwashing area and top of the dishwasher require cleaning.
Better organization required for the middle prep area.
Corrective Action(s): Ensure to have these areas cleaned on a more regular basis.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: No Foodsafe certified staff working on site. Repeated violation. Correction Order issued.
Corrective Action(s): Ensure to have at least one Foodsafe Level 1 or equivalent certified staff on site. Failure to comply with this Order will result in issuance of Violation Ticket - 1) for not complying with Health order and 2) violation

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezer operating at -18'C.
-General food storage practice satisfactory, except mentioned above.
-200ppm chlorine solution available in a bucket to hold wiping cloths. Ensure all prep surfaces are sanitized BEFORE initiating any food prep in the morning, after each possible contamination and every 2 hours during operation. Ensure all staff are properly trained regarding this.
-Low temperature dishwasher achieved the minimum level of chlorine (50pp) after final rinse.
-Ventilation canopy hood serviced and maintained.
-Back storage area satisfactory.

General sanitation of the kitchen and pizza prep area satisfactory. However, few areas require more frequent cleaning as mentioned above.

NOTE: Facility no longer uses reusable plates/utensils. Mostly take outs, but if customers want to dine in, single use plates/utensils are used.
