- Hot-holding cabinet is not maintaining an ambient temperature to allow extended storage periods for pizza slices (ie. temperature is below 60 degrees Celsius)
*Staff indicate that the pizza slices are removed if not sold within 2-3 hrs after cooking
*Note: Maximum storage time allowed for cooked foods held at temperatures below 60 degrees Celsius is 4 hours.
