Cooling units ok. Prep cooler base is less than 4 C. *Make sure the upper lid is closed between orders.
Freezers below -18 C.
hand wash stations OK.

Make sure walls around prep areas are kept clean, especially those areas within splatter distance. Make sure spills are cleaned up right away so they area easier to clean.
Recommend a second small bucket and cloth be maintained in the front area for general spot cleaning and sanitizing. Use the same ratio as used for the dish sanitizing.
Make sure the wet bath for the knife is changed regularly (2 hours) and the container is washed and sanitized daily as discussed.
