Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Build up of grease and food debris noticed on the exterior and interior of all coolers, rice cookers, sushi bar coolers, ice maker and all other equipment
Correction: You must clean the exterior surfaces and shelving in all coolers. Ensure to clean all equipment on a weekly basis to prevent accumulation of food debris and grease ( By August 31, 2019).
Comments

Dishwasher has been repaired and new Chlorine sanitizer has been ordered. Final rinse tested 100 ppm at the plate surface.
Floor underneath all equipment have been thoroughly cleaned.
All equipment including sushi bars have been cleaned.
A new screen door has been installed at the back entrance.

Dry storage shelves have been painted.
Floor behind the deep freezer in dry storage room has been cleaned.

*The fish storage cooler still requires repair to address water build up issue ( Immediately)
Ensure to monitor and record equipment temp and dishwasher final rinse sanitizer every day.
