Observation (CORRECTED DURING INSPECTION): * There were several wiping rags found on counters in unsanitary manner in kitchen areas. Wiping rags should be stored in sanitizer between use and not left on counters. Also, when wiping knives use single use paper towels, not dry rags as this is unsanitary. Note: Knives should be sanitized at least every 2 hours through out day.
Corrective Action(s): * Ensure ALL wiping rags left in sanitizer between use and NOT left on counters as this is unsanitary. This has been a repeat violation on many previous inspections and NOT acceptable practice

Observation: * Some food equipment and food stuff was being stored improperly and can lead to cross contamination issues. Reorganize ALL storage areas including walk-in coolers, etc., to keep all food/food equipment properly organized to reduce risk of cross contamination
Corrective Action(s): * Ensure ALL areas of food/food equipment storage maintained and organized so as to reduce risk of cross contamination. Keep all food covered in storage areas (eg. taco salad shells, etc.)

Observation: * Flies were noted during inspection. One of the fly control devices was brokena and requires repair/replacement. Operator to order new one
Corrective Action(s): * Ensure fly control devices in place and pest control program maintained and up to date at all times to reduce risk of pest entrance/harbourage

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Some build up of grime/debris found under/behind equipment through out kitchen/storage areas that requires immediate cleaning attention. Also, vents above cooking lines in kitchens were dirty and require cleaning/maintenance. Storage racks (eg. walk-in coolers, etc) were filthy dirty and require immediate cleaning attention to maintain sanitary conditions. Floors in dining areas too were dirty and require cleaning and regular maintenance
Corrective Action(s): * Ensure ALL areas properly cleaning/sanitized regularly on schedules and maintained at ALL times. This includes floors, equipment, etc.

* Cold-holding units were 4'C/40'F or colder
* Hot-holding units were 60'C/140'F or hotter
* Freezer units were -18'C or colder
* Sanitizer was available and at 200 ppm quaternary ammonium concentration in buckets to store wiping rags
* Monitoring records were available; operator to update monitoring records to ensure all cleaning details completed and monitored regularly
* Staff were dressed appropriately with uniforms and hair protection
* Hand washing sinks had liquid soap and paper towels available and staff were seen washing hands
