Observation: The 2-comp dishwashing sink has a leaking waste pipe. Water is dripping and pooling on the floor, this will attract and harbor pests (flies).
Corrective Action(s): Immediately call a certified plumber to repair/replace the leaking waste pipe to stop it from leaking. Wash the waste pipe to remove food debris on it.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; walk-in-freezer was -23C; hot holding units above 60C; thermometers present and temperature recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 80.9C at the plate's surface, as per max/min thermometer.
- Handwashing sink stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle, and 2-comp sink for manual warewashing had 200ppm strength. Test strips present.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate and below RTE foods; and foods stored 6" off the floor on racks and platforms.
- General sanitation level is good.
- Exhaust canopy was professionally cleaned in April 2023. Next service due in October 2023. Staff are cleaning the filters and hood between professional cleaning. Good.
- No signs of pests. A professional pest company is contracted to monitor and eliminate any pests.
- Valid FoodSafe certified staff present.
- All violations from the previous inspection have been addressed.

ACTION
- Place RMD stickers on containers storing tongs, used to dispense foods (pulled pork, cooked bacon). Tongs are being held at room temperature, bacteria will grow on the tongs (where food touches). Staff shall get new, clean tongs every 2-3 hours. The use of RMD stickers will notify staff when to change the tongs.
