- 2-comp sink maintained. Fill plug noted. Implements washing and sanitizing were discussed. Detergent available.
- Meat slicer cleaning and sanitizing procedure discussed and reviewed.
- Probe Thermometer available and calibrated with ice water slush.
- Display coolers measured at or below 4C/ 40F. Hot holding unit measure at or above 60C. Soup in hot holding pot measured at or above 140F.Temperature monitoring log kept updated for all units.
- Staff hand washing observed to be adequate.
General sanitation is satisfactory.
