Observation (CORRECTED DURING INSPECTION):
1) Mould build up on less-often-used milk and cream dispenser at coffee station.
2) Leak in bottom of prep cooler from cooling unit.
Corrective Action(s):
1) Machine cleaned at the time of inspection. Please ensure this machine is included in routine cleaning.
2) Coolant hose unclogged at the time of inspection. Please monitor.

Comments

General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
- sanitizer measured 200ppm quats in several sanibuckets throughout food prep area
- dishwasher reached 77C at the final rinse cycle
- coffee stir spoons in ice water
- chicken for new menu item comes pre-cooked
- no obvious sign of pests at the time of inspection
- general sanitation is satisfactory

Temperatures:
- hot held soups: 65-70C
- hot holding drawers: 65C
- under the counter cooler by drive thru: 3C
- under the counter cooler away from drive thru: 2C
- prep cooler (inserts/bottom): 4C/3C
- display cooler: 2C
- milk/cream machine closer to drive thru: 2C
- milk/cream machine away from drive thru: 5C - cleared of ice build up at the time of inspection, ensure temperature drops to 4C
- walk-in cooler 4C
- walk-in freezer -11C (currently on defrost, ensure that this reaches -18C)
