Observation: Noted ice at the bar stored in one compartment of mini three compartment sink where hand washing takes place. Ice well was empty. Ice well and mini three compartment sink back up when tap is turned on.
Corrective Action(s): Immediately discard ice and do not dispense ice from three compartment sink or ice well until the back up issue has been fixed. Ice at the bar is to be dispensed from a clean container.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Ice well and mini three compartment sink at the bar area backs up (slightly - ie. water pools at bottom of sink but does not over flow). Hand washing can still take place but ice will become contaminated.
Corrective Action(s): Have sinks fixed so that they do not back up. To be corrected within two weeks.

Comments

Hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
All coolers 4C or less (walk in cooler, under counter units, inserts..etc).
All freezers less than -18C
No hot holding available at time of inspection.
Good general sanitation. No obvious sign of pest activity noted at time of inspection.
Back door was closed at time of inspection. Door sweep installed.
Meat slicer appeared clean at time of inspection
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Low temperature dish washer had 50ppm chlorine.
Chlorine sanitizer in containers with cloths submerged and spray bottles 100ppm.
All stored foods appeared protected (ie. stored off the ground, covered, lights in food preparation area had sleeves..etc)
