Observation (CORRECTED DURING INSPECTION): Quat sanitizer was measured at approximately 50ppm in spray bottles, cloth buckets, and directly from the dispenser. Staff have been recording the concentration as 200ppm on daily record sheets.
Corrective Action(s): Sanitizer manually diluted during inspection - ensure a concentration of 200ppm is used for all sanitizing tasks. Do not falsify records - if the solution is tested and observed to be at the wrong concentration, contact a technician for service. Re-sanitize all dishware prior to use.

Observation: Quat sanitizer dispenser is operating at approximately 50ppm concentration. 200ppm is required for adequate food contact surface sanitation.
Corrective Action(s): Have a technician adjust the dispenser by 11th November 2016. Ensure sanitizer is diluted to 200ppm manually, as required.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Staff on duty did not have Food Safe Level 1 (or equivalent) training. This is a repeat violation. One staff member stated they will be taking the course within 1 week.
Corrective Action(s): Ensure at least one staff member with this training is on site at all times the restaurant is operational. Note that further contraventions may result in the issuance of violation tickets (minimum $230) for each subsequent day there are no trained staff on site. Provide proof of staff having taken the training to the health unit - card provided.
