Observation: Dry storage shelves are made of wood. These shelves should be finished with easy to clean material (ie. painted).

Comments

Followup inspection.
The following observations were made during this inspection:
1. All coolers are at 4c or below.
2. All freezers are -18c.
3. Hot Holding unit is at 60c and above for buffet.
4. Dishwasher reached 50ppm concentration for rinse cycle.

The following items have been corrected from last inspection:
1. All foods are being stored in containers with sealable lids. All containers are labelled.
2. Walkin freezer is now in operation and found at -18c.
3. Handsink in kitchen area has enough clearance for all employees to use sink as discussed during last inspection. This is great!
4. Sanitizer buckets are at 100ppm concentration for bleach water and labelled appropriately. Rags are being stored inside sanitizer buckets.
5. Operator has valid foodsafe.
6. Operator has provided updated copy of foodsafety plan. Some menu items require updated foodsafety plan to be submitted.
7. Cleaning program weekly schedule has been completed and is being used for all deep cleaning throughout kitchen.
