Observation (CORRECTED DURING INSPECTION):
- Bleach sanitizer in buckets stripped out test strips - concentration is over 200ppm.
Corrective Action(s):
- Ensure to mix the right ratio of bleach and water to achieve 200ppm bleach (1/2tsp bleach to 1L water). Sanitizer was diluted with more water at the time of inspection.

- Screen door was present but not in use. Ensure to have the door or the screen door closed at all times.

Observation:
- Food debris observed inside prep cooler.
- Mouldy surface observed inside ice machine.
Corrective Action(s):
- Clean and sanitize the areas noted above. For ice machine, turn the power off, empty all ice out and clean & sanitize.

Comments

- All sinks are fully equipped.
- All coolers at 4C or below.
- All freezers range from -10C to -13C.
- Hot held rice at 60C or above.
- High temperature dishwasher reached 71C or above during the final rinse.
- No signs of pest observed at the time of inspection. Monitoring is done every 2 months by a professional pest control company as per the operator. The frequency of visit was reduced from monthly to every 2 months because no rodent activity was observed.
- Operator holds valid Foodsafe level 1 certificate.
- Meat slicer and ice shaving machine in sanitary condition.
