Observation (CORRECTED DURING INSPECTION): Large pot of vegetable curry placed in standing refrigerator to cool off. Probe thermometer gave reading of 45 degrees Celsius; Operator stated that he had made the batch at 10:00am (observation made at 12:30pm), and used an ice bath to partially cool curry.

Corrective Action(s): Discussed proper cooling with Operator (60 to 20 degrees within two hours, and 20 to 4 degrees or lower within four hours).
Place curry into shallow pans and into refigerator holding below 4 degrees Celsius. Follow proper cooling proceduring going forward, and do not cool in large batch pot.
