Follow up to see that the dishwasher is still maintaining minimum wash water temperature of 120 deg F. Temperature was found to be 120 deg F at the plate surface during the cycle. Good.
Hot water at tap still very hot and recommended that it be turned down. Staff lowered temperature of hot water tank again at time of inspection. Monitor carefully to ensure that temperature of wash water is not affected by this when running the dishwasher.
Grease trap still in need of repair.
