Observation: 1) Vegetables were covered in newspaper.
2) Foods were stored in direct contact with used plastic bags.
Corrective Action(s): 1) Discontinue the practice of using newspaper to cover food items. Foods must be covered with food grade materials.
2) Discontinue the practice of storing foods in direct contact with used plastic bags. Plastic bags are intended for single use and cannot be properly washed and sanitized.

Observation (CORRECTED DURING INSPECTION): Shrimp and was thawing at room temperature.
Corrective Action(s): Frozen potentially hazardous foods must be thawed under cold running water or in a cooler at 4C or less at all times. Shrimp was thawed under cold running water at the time of inspection.

Observation: Prep cooler door seals were found to have food debris accumulating.
Corrective Action(s): Ensure all equipment is cleaned on a regular basis and is maintained in a clean and sanitary condition.

Observation (CORRECTED DURING INSPECTION): Prep cooler door seal requires repairs.

Comments

-Prep coolers were both at 4C (top and bottom).
-Upright cooler was at 4C.
-Both customer area upright coolers were at 4C.
-Front prep cooler was at 4C (top and bottom).
-Walk-in freezer was at -17C.
-Upright freezer was at -18C.
-Hot holding was greater than 60C.
-Chicken was reheated to greater than 74C.
-Cooked meats cooled rapidly in the walk-in freezer.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer was at 100ppm.
-Deli slicer was being used at the time of inspection. Operator stated the dishwasher is disassembled for cleaning and sanitizing after each use.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until July 4, 2023.
