Follow up inspection to MTRG-AETQAT
The following deficiencies were corrected:
- Steam table for lunch buffet hot holding foods at 60C or above during time of inspection
- Foods were kept covered with lids or plastics wrap in cold holding units during time of inspection
- No foods were found to be stored on floor during time of inspection
- Sanitizer solution available throughout the facility at concentration of 100-200ppm chlorine concentration during time of inspection (All bottles were labelled)
- Pizza prep cooler was cleaned within
Note: Fan cover still requires cleaning
- Fan covers in walk-in cooler appears to have been cleaned
- Moderate grease accumulation on metal slats of commercial fume hood has been removed
- Debris accumulation observed underneath equipment in kitchen facility has been mostly removed
Note: Maintain these areas regularly
- Food spillage observed on walls of facility to be less apparent
Note: Continue to maintain these areas regularly
- Contact surfaces such as handles in facility has been cleaned
- Slight oil/liquid spillage observed by dishwasher has been cleaned
- Area underneath low temperature dishwasher has been cleaned
- Handwashing station across from main cook line was clear during time of inspection
