Observation (CORRECTED DURING INSPECTION): Several knives were stored in a plastic container on top a towel with a lid partially covering container. This is not a sanitary method of storing equipment and utensils. Cloth towels should not be used to dry items as it can reintroduce contaminants.
Corrective Action(s): Clean and sanitize knives. Store utensils in designated area in a clean and sanitary manner. Recommended to get knife holder.

-Stand-up freezer: -12C

Front Area:
-Beverage cooler: 1C
-Chest freezer (left): -8C
-Chest freezer (right): -10C
-Small chest freezer: -26C

-Handsinks have hot/cold running water, liquid soap, and paper towels.
-Sanitizer bucket measured at 200ppm chlorine using test strip.
-High-temperature dishwasher measured 71C at plate surface.
-Vent hood had some grease build-up noted. Next service date is Sept 2022.
-No signs of pest activity at time of inspection.
-Overall sanitation is satisfactory.
-Food storage is satisfactory. Raw meats stored below ready-to-eat foods. Stored food containers are covered.
-Observed small pot of sauce cooling per staff. Ladle available to stir sauce to enhance cooling process. *NOTE: Ensure foods are cooled rapidly from 60C to 20C within 2 hours, then 20C to 4C within 4 hours.
