Observation (CORRECTED DURING INSPECTION): Manual vegetable slicer was found to have dried tomato seeds in the blade and base of the equipment after washing and sanitizing.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized after each use to prevent potential cross contamination. Slicer was washed and sanitized at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Prep coolers were 3C and 4C.
-Under counter cooler was not in use at the time of inspection. Cooler door does not close properly, but is currently not being used for the storage of foods.
-Hot holding was greater than 60C. Meatballs are reheated in the microwave prior to hot holding.
-Temperatures checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer dispenser was tested at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle labelled and tested at 200ppm.
-Quats sanitizer concentration tested daily and recorded.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Staff FOODSAFE Level 1 valid until January 5, 2024.

COVID-19 Precautions:
-Facility is required to complete and post a COVID-19 safety plan.
-Facility has opened dining area. A total of two tables are set up (four chairs at one table and three chairs at the other table - less than half of capacity). Tables are more than 2m apart.
-Self service beverage dispenser is not currently in use.
-Floors are marked with circles to designate waiting area. One of the waiting spots must be removed because it is too close to the table where customers can potentially dine.
