Observation: Dishwasher does not reach 71C after multiple tries. High temperature dishwasher is reaching 63.5C.
Corrective Action(s): Alternative dishwasher method has been discussed with operator:
1. wash and rinse in the high temperature dishwasher
2. sanitize in two compartment sink
3. air dry utensils/ equipment

QUAT sanitizer must be 200ppm or if Bleach and Water solution 100ppm. Two compartment sink has plug.

Maintenance has been called on site during inspection to fix dishwasher.

Observation: Walk in cooler in the back is sitting at 10-12C air temperature.
Food was probed - sitting at 12C.

Ensure that all potentially hazardous food is thrown out.

Wraps were made today. Staff indicated that ingredients were pulled from working coolers. Wraps and other food made today, were placed in other coolers at Dageraad Brewing with operators permission. Food will be kept there until delivery today.

Correction: have maintenance done on the walk in cooler. Cooler must maintain 4C or less.

*reminder to record temperature logs daily, and to obtain working thermometer to keep inside the walk in cooler.

Mouse droppings from behind the chest freezers have been cleaned. No signs of pests during time of inspection.
