Observation (CORRECTED DURING INSPECTION): Significant mould accumulation observed in upper section of ice machine. Staff state this machine is on a weekly cleaning schedule.
Corrective Action(s): Machine cleaned during inspection. As the top door is screwed on, ensure the top door is removed and the machine is cleaned and sanitized according to manufacturer's directions.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Employee observed handling containers of food without washing hands, after handling personal cell phone.
Corrective Action(s): Corrected during inspection. Ensure all employees thoroughly wash hands using warm water and liquid soap, and dry with paper towels, after any activity that might contaminate hands. This includes handling personal items such as cell phones, bags or medications.

Observation: Hot tap at front pizza area hand sink is inoperative. Additionally, the faucet on the rear kitchen hand sink is leaking while in use. Operator states parts are already on order.
Corrective Action(s): Both issues must be corrected by Friday this week (7th October 2016). Call for reinspection once fixed - card provided.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): Two unlabeled spray bottles of quat sanitizer were observed on site.
Corrective Action(s): Labeled during inspection. Ensure all chemicals are properly labeled to reduce the risk of accidental food contamination.

Comments

*General sanitation satisfactory. No pest issues observed on site, with the exception of several fruit flies around the bar and keg storage/recycling areas. Ensure professional pest control is brought in to treat these areas and eliminate the problem.
*Hand washing practices generally satisfactory (see violations section). Ensure all staff use the back kitchen or bar hand sinks until the central hand sink can be fixed. Liquid soap, warm water and paper towels available at these two sinks.
*All cooler and freezer temperatures satisfactory (wine-only coolers in bar area not checked). Ensure accurate thermometers are available in each cooler and freezer unit.
*Organization of raw and ready-to-eat foods satisfactory in coolers and storage. Dry storage area tidy. Cooling practices appeared adequate during inspection.
*Quat sanitizer available at 200ppm.
*Meat slicer and other tools and utensils stored and maintained in clean condition.
*Low-temperature dishwasher provided 100ppm chlorine sanitizer in final rinse.
*Glass washer provided 12.5ppm iodine in final rinse.
*Ice wells and soda gun maintained in clean condition in bar area. Note: area behind the glass washer requires cleaning - ensure this is cleaned by Friday this week (7th October 2016).
