A screen has been installed on the back door. OK, but you must also add a rodent proof bottom. A moveable gate/ barrier will work.
Chlorine sanitizer dishwasher has been restocked with concentrate - residual rinse water found at approximately 50ppm
All rice, flour, spices, etc have been removed from dry storage and into either heavy duty plastic bins or metal storage case
Prep cooler measured 4C above, 3C below and has been fitted with new thermometers.
**Keep the top closed when not in use!
Black garbage bags have been removed from service. Use food grade plastics or (for your frozen momos) you may use food grade bins/ buckets.
Eg. multi gallon buckets/ bins can be found at restaurant supply stores that are capable of high and low temperatures.
**Please keep only packaged products in your milk crates. They are not designed for food contact (onions). Use food grade bins instead.
