Observation (CORRECTED DURING INSPECTION): Operator demonstrated the manual dishwashing procedure. No sanitizing step mentioned.
Manual dishwashing sign was posted above 3-compartment sink. This is not being followed.
Discussed importance of the sanitizing step with operator. 100 ppm bleach solution was prepared in one of the sink compartments at time of inspection.
*Unscented bleach is to be used to prepare sanitizing solution.
*Recommend obtaining bleach test strips to verify concentration.

- GE cooler: 4.0 deg. C.
- pop cooler: 3.8 deg. C.
- hot holding (pizza): 32-40 deg. C. (pizzas discarded after 1-1.5 hours)
100 ppm bleach solution available in spray bottle. Spray bottle is properly labeled.
Food items well organized in walk-in cooler. Foods stored at least 6" off the ground. Cooked meats and vegetables stored in separate areas.
No pest concerns at time of inspection.
