Observation (CORRECTED DURING INSPECTION): Lemon slicer and potato slicer blades were observed to have dried-on food debris again.
Corrective Action(s): Disassemble both slicers to clean and sanitize thoroughly. Use a brush to scrub the bades.

Observation (CORRECTED DURING INSPECTION): Staff washroom was missing soap and paper towels.
Corrective Action(s): Operator refilled dispensers at time of inspection. Ensure all handwashing stations are always properly supplied with liquid soap and paper towels.

Observation (CORRECTED DURING INSPECTION): In-use utensils were stored in sanitizer again.
Corrective Action(s): Discontinue this practice. Sanitizer requires time to air-dry. When used to store in-use utensils, the sanitizer does not dry from the surface of the utensil and can contaminate food. Store all in-use utensils in ice water, and wash and sanitize every 2 hours.

- All other hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in sanitizer buckets and from dispenser
- Three-compartment sink maintained in sanitary condition
- All coolers were measured to be at 4C or colder
- Walk-in freezer was on defrost cycle, measured to be at -3C. Ensure freezer can maintain temperatures of -18C or colder when not on defrost cycle.
- Hot held food items were measured to be above 60C
- Temperature records well maintained and up to date
- Food storage practices satisfactory
- General sanitation satisfactory
- No signs of pest activity noted
- Operator has renewed FoodSafe Level 1 certificate
