Observation (CORRECTED DURING INSPECTION): Equipment and utensils not adequately sanitized. Items are submerged in sanitizer solution for 30-60 seconds only before left out to air dry.

Please review manaul warewashing procedure:
Step 1: wash
Step 2: rinse
Step 3: sanitize, items must be submerged for at least 2 minutes
Step 4: air dry

All equipment and utensils that were prevoiusly sanitized today must be sanitized again following the steps above.

Observation: Food debris, crumbs and dust were noted under prep tables and working counters.
- Center prep table where pizza boxes are stored
- Under toppings cooler
- Back storage area underneath shelving and working counter
Corrective Action(s): Clean and sanitize the above mentioned area. Remove food debris and crumbs to avoid attracting pests such as rodents or ants.

Routine

- Walk-in cooler: 2C
- Toppings cooler:
- Probed toppings: shredded cheese 3.7C, chicken breast 3.9C, pepperoni 3.4C, sliced onions 3.9C.
- Undercounter drawers: 2.2C and 3.3C
- Beverage cooler: 5C (non-PHFs only)
- Temperature logs are maintained and kept on site. Taken 4 times daily (approx. every 4 hours).
- All stored foods and toppings are date stamped for no more than 2 days. All leftover items are discarded.

- 200ppm QUATS dispensed from 3 compartment sink dispenser. Test strips on site to verify concentration.
- 3 compartment sink was just drained prior to inspection. Sink plugs are available.
- Handsinks supplied with hot+cold water, liquid soap and paper towels. No obstructions.
- General sanitation satisfactory (except above mentioned areas).
- No signs of pests at time of inspection.
- Pest control devices noted on site - services are provided monthly by Orkin. --> last report reviewed (July 8, 2021) with no major concerns. Noted the backdoor door sweep was replaced.
- FOODSAFE requirements met.
- Health permit posted.
