Observation (CORRECTED DURING INSPECTION): Potentailly hazardous foods (sauces, dairy products, bean soup, cut vegetables) were stored in a cooler that measured 13C. Noted items were discarded during inspection.
Corrective Action(s): Do not store foods in this cooler until it is repaired.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer was made and operator had resumed handling of foods. Food contact surfaces had not been sanitized.
Corrective Action(s): Ensure to prepare sanitizer solution (100-200ppm chlorine) and store cloths in it. All food contact surfaces must be sanitized prior to food prep.

Observation: One of the handsinks in the kitchen (the once beside the prep sink) was not being used. No soap and paper towels stocked at this hand sink. Foods were being dumped in the sink.
Corrective Action(s): Hand sink must be equipped with hot & cold running water, liquid soap and paper towels at all times. This sink shall be used for washing hands only. Do not dump foods in this hand sink as it will clog the drain. DATE TO BE CORRECTED BY: IMMEDIATELY

Observation: Dumplings were stored right on top of a bag of raw meats.
Corrective Action(s): Ensure to store all raw meats on the bottom shelf and away from other food products.

Observation: 1. The cooler in the front area measured 13C. Potentially hazardous foods were discarded and non-potentially hazardous foods were moved to other coolers.
2. The walk-in freezer measured -6C.
3. The upright cooler where drinks and sprouts are stored measured 11C.
Corrective Action(s): 1. Coolers shall be repaired to maintain temperature at or below 4C.
2. Freezer shall be repaired to maintain temperatuare at or below -18C.
3. Start a temperataure log for all refrigeration units. DATE TO BE CORRECTED BY: IMMEDIATELY

ATTENTION: Once can is opened, all food contents must be transferred to a food-grade container for storage.
