The high temperature dishwasher reached 82 C at the final rinse ( record is available in the daily temperature logs ) Hot holding units - all operating at above 60C Quats is measured at the front serving station at 200ppm and concentration of the sanitizer is recorded and monitored daily. - Thank you Accurate thermometers - installed Food safe training information provided Please remove the insects control devices away from the cooking/food preparation area.
