Hot holding units - all operating at above 60C
Quats is measured at the front serving station at 200ppm and concentration of the sanitizer is recorded and monitored daily. - Thank you

Please remove the insects control devices away from the cooking/food preparation area. It should be discussed with your pest control contact ( e.g. sticky traps that trap insects by adhesive ) about best location.
