Observation (CORRECTED DURING INSPECTION): High-temperature dishwasher is not functioning during inspection. Staff using 3-compartment sink for cleaning and sanitizing dishware. 3-compartment sink is available with drain plugs and QUATs sanitizer at 200 ppm QUATs concentration. Single-service disposable cutlery and dishware used for service.
Corrective Action(s): Continue using the 3-compartment sink method to clean and sanitize all equipment and utensils until the dishwasher is verified by the health inspector to reach minimum 71'C at plate surface. Monitor sanitizer strength in the third compartment with QUATs sanitizer strips, ensuring sanitizer is at 200 ppm QUATs concentration.

Observation: Multiple fruit flies observation in service area and next to dishwasher during inspection. Staff stated that the last pest control service was in March. Pest control invoice available on site and verified. Yellow sticky fly traps are set around the kitchen area.
Corrective Action(s): Monitor fruit fly population and if population increases, contact pest control company before the next scheduled service to assess and apply treatment as necessary. Keep all food covered and ensure to keep the premise in sanitary condition to prevent harbouring and breeding of fruit flies. Replace sticky fly traps often and ensure to place the traps in non-food preparation areas.

Observation: High temperature dishwasher not functioning during inspection and not able to reach minimum required final rinse temperature of 71'C at plate surface. Manager stated that the dishwasher parts are on order (as of Apr 2, 2023).
Corrective Action(s): Repair high-temperature dishwasher to to ensure it is able to reach 71'C at plate surface (minimum) to adequately clean and sanitize equipment. Contact the health inspector once the dishwasher is repaired.

- All sandwich and preparation coolers (top inserts and bottom) at or below 4'C
- Hot-holding at or above 60'C
- General sanitation of premise is satisfactory
- Hand washing stations are unoccupied supplied with hot and cold, running water, liquid soap and paper towel
- QUATs sanitizer in pails with wiping cloths measured at 200 ppm QUATs concentration with test strip
- Pest control company contracted to complete monthly inspections
- All food observed covered and stored at least 6 inches off the floor
- FOODSAFE Level 1 trained staff is available on site
- Staff observed wearing hair nets and gloves
*REMINDER: ensure to change gloves frequently between tasks. Gloves are not a replacement for proper, frequent, adequate hand washing.
