Food worker on site during inspection has a valid Food Safe certificate - good (expiry Aug 2023).
Note: Take FoodSafe Refresher course to renew certificate before it expires.
Coolers - walk in, large reach in, and display coolers - are at 4C/ 40F or colder. Keep daily temperature records.
Thawing food in walk in cooler - good.
No hot holding during inspection.
Freezers - good.
Watch dates on deli meats (some discarded during inspection). Ok if these have been frozen however watch dates for ready to eat refrigerated deli meats.
Dry storage - good.
Hand washing sink has hot/cold water, liquid soap, and paper towels in dispenser.
Meat slicer - not in use. Clean and sanitize prior to next use.
Chlorine sanitizer for wiping cloth - about 200ppm detected using test strip - good.
Commercial dishwasher - has a final chlorine sanitizing rinse - 50ppm chlorine concentration detected on plate after final rinse - good. Check concentration and keep records.
Cleaning - good. Following a routine cleaning schedule.
Pest control - Monitoring traps used. No obvious signs of pests.
