Observation: Mice droppings noticed in hard-to-reach areas underneath the dry storage shelves, under the tables near back entrance, janitorial sink area and under the dishwashing table.

No records are kept for dishwashing temp monitoring and bar washer iodine sanitizer levels. You must train staff on how to monitor and record equipment temps, dishwasher final rinse temp and bar washer sanitizer monitoring. Daily records must be maintained.
