200 ppm of QUAT sanitizer available on site; when inquired, staff explained that all contact surfaces are cleaned with sanitizer from spray bottle and paper towel for prep tables, and clean set of cloths used on white cutting boards at sandwich prep area
Manual dishwashing procedures appropriate; third compartment filled with sanitizer at 200 ppm of QUAT
Ice machine in sanitary condition
Sandwich inserts are at 4 C or lower; under counter cooler at 4 C or lower; beverage cooler at 4 C or lower; walk-in cooler at 4 C or lower; walk-in freezer at -18 C or lower; hot holding units at 60 C or higher; temperature records are updated daily
Organization is good in dry storage and walk-in cooler/freezer
