Observation:
- Fruit flies observed near the bar handsink area. Dirty dishes observed near the sink.
- 1 dead mouse observed in a tincat trap inside kitchen.
Corrective Action(s):
- Ensure to not store dirty dishes by the handsink area. Put them away at a designated bin. Remove food/water sources to not attract them. Empty the strainer in the handsink frequently.
- Discard the glue board with dead mouse. The trap itself has greasy build up. Clean the trap or replace it.

Observation:
- Grease build up observed on the vent hood panels.
- Moulds observed on the ceiling of beer walk-in cooler (back kitchen).
- Debris observed on the counter underneath pizza dough machine (left corner).
- Broken glass shards and debris observed inside glass cooler (bar).
Corrective Action(s):
- Clean the areas noted above.

Observation:
- Broken soap dispenser by the bar handsink.
- Broken paper towel dispenser in the kitchen (by the entrance).

Comments

- All handsinks are fully equipped.
- All coolers at 4C or below.
- All freezers are at - 12C to -23C.
- QUAT sanitizer available in spray bottles measured at 200ppm.
- Low temperature dishwasher measured 100ppm chlorine from the final rinse water. Temperature of the rinse water reached 60C.
- Glass dishwasher measured 12.5ppm iodine.
- Temperature logs are maintained for the coolers .
- Monthly pest control service by Abell as per the staff.
- Kitchen floor is power washed 2X a week as per the staff.

*Practice labelling the date of preparation for all the food items that are prepared in advance: soups, marinated meats etc.
*Defrost the coolers with ice build up by the fan unit. Ensure to move all the food items to a working cooler before turning off the cooler.
*Observed unplugged large mixer inside staff washroom. Staff stated this mixer is broken and is waiting to be picked up. Ensure to remove unused equipment from the premises.
