Observation: Party room chest freezer was at -2C. Freezer unit was unplugged.
Corrective Action(s): Freezer unit was plugged back in at the time of inspection. Ensure freezer units are maintained at -18C - monitor and service/adjust as needed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Rodent droppings were found in the office area and some green droppings were observed in the storage hallway between the main kitchen and party room.
2) Some mould was in the wine cooler in the party room.
Corrective Action(s): 1) Clean all areas affected with rodent droppings and sanitize with a 1:10 bleach solution. Monitor for pest activity and contact pest control services as needed.
2) Clean cooler unit and ensure all equipment is maintained in a clean and sanitary condition.

Observation: 1) Broken floor tile along the cook line was allowing water to accumulate.
2) Carpet mat was lining the floor in front of the walk-in cooler.
Corrective Action(s): 1) All surfaces must be smooth, non-absorbent and easily cleanable. Either replace tile or fill the space to prevent water accumulation.

Comments

-Main walk-in cooler was at 2C.
-Back walk-in cooler was at 4C.
-Back walk-in freezer was at -13C.
-Kitchen prep coolers were at 4C (top and bottom).
-Bar area cooler was at 3C.
-Kitchen upright freezer was at -14C.
-Back chest freezers were at -18C and -17C,
-Hot potentially hazardous foods are cooled rapidly in the walk-in freezer. Sauces made today were below 4C.
-Chicken cooked to greater than 74C.
-Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface (minimum 50ppm chlorine required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Did not observe any staff hand hygiene issues at the time of inspection.
-Bleach sanitizer pails and spray bottle tested at 100ppm to 200ppm. Containers were properly labelled.
-Ice machine was clean and well maintained. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. raw meats stored below ready-to-eat foods.
-Facility serviced by a professional pest control operator every 2 weeks. Facility is serviced for rodents and cockroaches.
-Washroom clean and well maintained.
-Operator FOODSAFE Level 1 valid until July 23, 2023.
