209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Food contact surfaces (mixing bowls) were stored over a lower surface of a table that had rodent droppings on it. Mixing bowls did not have rodent droppings present in them.
Corrective Action(s): Chef instructor had the mixing bowls placed through the dishwasher at the time of inspection. Make sure prepartion utensils (mixing bowls) are stored in a manner to protect them from contamination (e.g. covered, in an enclosed cabinet, or on a high shelving unit in the dry storage room).

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings were observed in the following areas:
-Floor behind the cook line
-Floor below prep. tables near the cook line
-Lower surface of a table near the cook line
-Floor below the dishwashing area
-Floor corner next to the ice machine.

Note: School has a pest control program in place from Abell for the cafeteria and certain other areas of the school. Pest control report dated 2/1/2020 was available on-site. The door between the cafeteria and school is shut after the lunch service according to the Chef Instructor; this will help protect the cafeteria from the entrance of pests from the school.
Corrective Action(s): 1) Clean and sanitize the aforementioned areas to remove the rodent droppings; Correct today.
2) Have a pest control company provide a service as soon as possible and provide the district E.H.O. a copy of the pest control report via email or fax.
3) Monitor for signs of recent pest activity during every work shift and make sure any new droppings are cleaned and sanitized immediately.
4) Continue covering all open dry storage items in sealed containers. Make sure preparation utensils are stored in a manner to protect them from contamination from rodent activity (e.g. inside sealed containers, enclosed cabinets, on higher shelving units in the dry storage room).
5) Keep the door shut between the school and cafeteria when lunch service is complete.
6) Sanitize preparation surfaces prior to use.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler and other coolers were at or below 4 degrees C and were equipped with thermometers.
Walk-in-freezer and chest freezer were at or below -18 degrees C.
Steam tables were preheated to at least 60 degrees C.
Dishwasher final rinse temperature was at 75.6 degrees C (71 degrees C or hotter) at the plate level.
Dishwasher temperature was at least 82 degrees C for at least 10 seconds during the final rinse cycle at the manifold.
200 ppm QUATS sanitizer was available inside the spray bottles.
Ice machine was empty of ice and was in a clean condition.
Dry storage room was in an organized and clean condition at the time of inspection.
Chef instructor with a valid FOODSAFE Level 1 certificate (expiration date: September 19, 2021) was on shift.
