Reviewed infractions with manager Pearl onsite.
Hot holding unit was shutting off automatically and repair has been done to fix this issue.
Temperatures were at 60-65C today.
Discussed procedure to hold bags of soup in hot holding unit.
Manager informed that chili is reheated on stove, then transferred to hot holding unit to keep warm until ready to transfer.
More inserts have been ordered so that soups can be transferred directly from stove to hot holding unit.
Do not use the hot holding unit to reheat soup as temperature cannot adequately be reached.
Faucet in staff washroom is scheduled to be repaired after New Years.
Cleaning done in the cooler, hot chocolate machine but mildew still noted in slushies machine.
Flooring under front handwash station is still not cleaned, with fruit flies noted. This area must be properly cleaned and maintained on regular basis.
Droppings under staff belongings area still not removed.
