Observation: Missing working thermometers in the following refrigeration units:
- small display cooler in the front of the bakery
- domestic cooler/freezer in the back of the bakery

Comments

- General sanitation is satisfactory.
- Back handwashing station supplied with cold/hot running water, soap, and paper towels.
- Upright freezer in the back of the bakery = -17C
- Domestic cooler/freezer in the back of the bakery measured at 4C and -16C respectively.
Note: The upright cooler beside the oven was not in use at the time of inspection.
- Larger display cooler in the front = 4C
- Upright beverage cooler in the front = 4C
- Missing daily temperature logs. Immediately begin daily temperature logs for ALL coolers and freezers.
- Two compartment sink available for manual dishwashing. Bleach sanitizer available at 100ppm concentration. Ensure to follow the proper manual dishwashing procedure: 1) wash 2) rinse 3) sanitize 4) air dry.
- Dry storage area needs better organization. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity.
- FOODSAFE trained staff could not be verified at the time of the inspection. Ensure to make copies of ALL FOODSAFE certificates and keep on site for review by the health inspector during the follow up inspection.
