Routine health inspection.
- Coolers at 4 degrees C or less.
- Freezers satisfactory. Note: Front area freezer has build-up of ice. Discussed: Staff/management to defrost.
- Hot holding internal food temperatures at 60 degrees C or more.
- Cooked chicken is time-tracked (within time stamps).
- Probe thermometer available.
- Food is covered and stored off the floor. Raw chicken and ready-to-eat items are stored in separate areas.
- Hand washing station is accessible and supplied with hot and cold running water, liquid soap, and paper towels.
- Three compartment sink is set up for manual warewashing. Quats sanitizer available in third compartment (200 ppm). Hot and cold running water available.
- Designated sanitizing buckets contain quats sanitizer at 200 ppm.
- Stored equipment and utensils in sanitary condition. Ice machine / bin appear to be in clean condition.
- Chemical storage away from food/utensils.
- No signs of pest activity observed at time of inspection.
- Temperature logs available and up-to-date.
