- Reduce bleach water is 200 ppm chlorine residual. Reduce to 100 ppm. Corrected during Insp.
- Dishwasher final rinse contained 100 ppm chlorine residual at the plate surface.
- Ensure temperatures are being monitored and recorded.
- Ensure that shwarma is reheated to 74°C after it is sliced and before serving.
