Comments

All surfaces, equipment, floors and shelving have been deep cleaned and sanitized. Good.
All food products and equipment are now stored off the floor.
A new cleaning checklist has been developed for staff to monitor all areas of the premises.
The cleaning logs must be checked by the supervisor/manager on a daily basis.

A special inspection was conducted by Orkin PCO services to assess the mice issue. A copy of the
Pest Control Emergency follow up report was provided by the operator.
Weather stripping has been installed on all exterior doors. A number of new glue traps and live traps
have been placed throughout the restaurant.
Walk-in cooler has been repaired. Registered 4 C at the time of inspection.
Sliding door cooler < 4 C.
Preparation cooler below 4 C.
Deep freezers below -18 C.
Dishwasher final rinse: 50 ppm Chlorine.
Bar washer: 12.5 ppm iodine.

THE PUBLIC HEALTH ACT CLOSURE ORDER IS NOW RESCINDED.
The following items are still outstanding and must be completed within 2 weeks:

1. Improve lighting in the dry storage areas and hallways.
2. Install durable and washable material sheets (e.g. FRP panels) in the dry storage area, behind
line cooler and in remaining areas of the walk-in cooler.
3. Ensure to seal spaces between FRP panels and walls to discourage pest harborage and for ease of cleaning.
4. Remove remaining debris from underneath the bar cabinets.
5. Consider installing puck lighting in dark cabinet spaces.
6. Submit a copy of the new cleaning checklists.
7. Staff must inspect all areas of the premises for any new mice droppings.
8. Staff must monitor and record dishwasher chlorine levels and bar washer iodine levels at least once daily.
