Observation (CORRECTED DURING INSPECTION): The surface sanitizer in designated white bucket measured 0ppm chlorine solution.
Corrective Action(s): The operator replaced the sanitizers with fresh solution. The surface sanitizers measured at 100ppm chlorine solution.

Observation (CORRECTED DURING INSPECTION): Frozen cooked chicken being thawed at room temperature.
Corrective Action(s): The operator moved the chicken inside the walk in cooler. Follow the proper thawing methods:
- inside the refrigeration units at < or = 4C
- under cold water
- in ice bath

Observation: - Significant build up of grease on wire racks inside the walk in cooler.
- Grease build up of up right cooler doors.
Corrective Action(s): Clean the areas noted above and implement a stricter cleaning schedule.

Observation: Dirty pizza pans stored in cardboard box.

Comments

- General sanitation is satisfactory.
- All handwashing stations (main kitchen) supplied with cold/hot running water, soap, and paper towels.
- All coolers (pizza, beverage, upright, walk in) < or = to 4C.
- All freezers (upright) < or = to -18C.
- All food items are stored in insert containers with lids or plastic wraps.
- Hot holding unit at > or = 60C.
- Daily temperature logs were not available at the time of the inspection. You must begin a daily temperature log for all refrigeration units.
- Three compartment sink available for manual dishwashing with drain plugs. Bleach sanitizer available. Please follow the proper procedure: 1) wash 2) rinse 3) sanitize 4) air dry. Ensure to keep the sanitizing compartment free of any dirty utensils and plates. This compartment is designated for sanitizing purpose only.
- Dry storage area has adequate space and wire racks. Dry food items must be stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
