Observation (CORRECTED DURING INSPECTION): Noted cloths stored in containers of quat that tested at 50ppm. Staff member changed quat sanitizer in these containers at time of inspection.
Corrective Action(s): Ensure quat sanitizer is maintained at 200ppm at all times. Review practices and increase frequency of quat change as needed.

Comments

- This inspection report was completed off-site and emailed to the manager. Observations and infractions of inspection were reviewed with the staff member in charge at time of inspection.
- Hand wash station in front service area and at warewashing sink in the back had soap, paper towel, hot and cold running water. Hand sink in the washrooms for staff and patrons had soap, air dryers, hot and cold running water.
- All coolers 4C or less (upright 2 door, undercounter ...etc)
- Freezer -18C
- Ice machine appeared clean with scoop stored outside of ice in separate container.
- Quat at source 200ppm. Quat test strips available. See violation code 302 for more details regarding staff in containers with cloths submerged.
-High temp dish washer achieved 71C (with thermolabel and provided to the staff member in charge at time of inspection)
- All foods appeared protected (stored off the ground, covered... etc.)
- Good general sanitation. No obvious signs of pest activity noted at time of inspection.
- COVID protocols: signage posted at entrance (masking, physical distancing and occupancy limit), floor markers available in patron area, high touch surfaces disinfected with appropriate product (DIN02486873), 4 staff on site at time of inspection and were all masked and maintaining physical distance, cohort staffing utilized as much as possible, symptom check done by staff, break area is in the back computer area and break times are staggered for the staff - only one person at a time.
