- Cooking line and prep. area hand washing stations supplied with hot and cold running water; liquid soap, and paper towels.
Note: Front service and kitchen entrance hand sinks are not in good working order. Today. Hand-washing sinks must be serviced. Hot and cold running water must be available.
Be informed it is violation codes: 308 & 401.
- Coolers (walk-in, prep) at < or = 4C
- Walk-in freezer at < or = -18C
- Hot holding unit (rice, soup) at > or = 60C
- Low temperature dishwasher at 100 ppm of Chlorine.
- Surface sanitizer at 200 ppm of Quat available in buckets with wiping cloths.
- Food is stored safely (covered and off the floor).
- Ice machine is maintained. Ice scoop is stored safely/in a sanitary manner/ at the time of inspection.
- Dry storage area is maintained. Bulk food scoops are stored in a sanitary manner.
Note: Observed oranges have been washed at the dishwashing area (clean side of the dishwasher). Please review the Corporate FoodSafety Plan and follow.

- Bar cooler - satisfactory.
- Glass-washer at 100 ppm of Chlorine sanitizer.
