Hand sink in processing room not obstructed and is provided with liquid soap and paper towels.
Bleach sanitizer solution available for use in spray bottle. Clean in place for the grinder, mixer, emulsifier, and stuffer.
3 compartment sink setup for manual warewashing. 100ppm bleach available for sanitizing disassembled pieces from clean in place equipment.
Walk in cooler at 4 degrees C.
Back exit equipped with a secure screen.
Large kettle with boiling water available for cooking.
Drying racks clean and in dedicated section of processing area.
Smoker available for use.
Scale available for weighing emulsions. Recipes followed.
pH meter with pH 4 and 7 buffer solutions available for use.
pH logs maintained. Target pH of 5.3 achieved for fermented cured products. ***Calibrate the pH meter on a monthly basis. Have calibration records available for review. Followup inspection required.***
