Observation: Sanitizer solution in three compartment sink at concentrations less than 200ppm QUAT. CORRECTED DURING INSPECTION - Sanitizer solution manually made in three compartment sink.
Testing strips missing at facility - CORRECTED DURING INSPECTION - Testing strips located.

Corrective Action(s): Ensure staff are adding undiluted QUAT to third compartment and testing to ensure concentrations of 200ppm are achieved until such time as unit can be serviced by technician.

Observation (CORRECTED DURING INSPECTION): Hot water available upon arrival of EHO. During inspection the hot water was gone. Staff had filled 2 sinks twice in a row with hot water and had drained the hot water tank.
CORRECTED DURING INSPECTION: hot water tank refilled and hot water was available after approximately 30 minutes.

Corrective Action(s): Ensure adequate supply of hot water at all times. Ensure staff do not drain hot water tank. Evaluate size of hot water tank and ensure it is able to supply restaurant with enough hot water at all times.

Observation: Rodent droppings observed in bottom of hand sink cupboard in front.

Corrective Action(s): Remove all equipment from lower shelves. Discard any contaminated equipment.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inspect facility for points of entry for pests. Seal any holes.
Obtain services of professional pest control company.
Have traps set.

Observation: Sanitizer dispensing unit not supplying sanitizer solution at appropriate concentrations. Unit was tested and observed to have less than 200ppm QUAT as required according to manufacturer's directions.

Corrective Action(s): Have sanitizer dispensing unit serviced by technician. The unit needs to be tested daily to ensure 200ppm QUAT is being dispensed. If unit fails then staff should alert Management and have item serviced immediately.
