Observation: Ice machine has what appears to be mould growth on upper ceiling.
Corrective Action(s): Clean and sanitize ice machine and add to your cleaning schedule.

Observation (CORRECTED DURING INSPECTION): Quats sanitizer used for wiping cloths and counters - concentration 0ppm. Other chemical on site is only labelled as a cleaner.
Corrective Action(s): Use all chemicals according to the label. Obtain information from supplier on dilution and use as per directions. Usually 200ppm quats is required for sanitizing food contact surfaces and wiping cloths without a potable water rinse. Provide test strips to verify concentration.

Observation: Minor evidence of droppings in vacuum storage area and on floor near dishwasher.
Corrective Action(s): Consult with licenced pest control. Seal holes where pests may enter. Clean up food and water spills daily and deep clean regularly. Monitoring for pests must be done as part of pest control program. For use of any pesticides, consult with licenced pest control.

Observation: Droppings noted. Floor in hard to reach areas requires better cleaning.

Observation: The wooden board near the oven is worn with exposed wood (repeat violation).
Corrective Action(s): Replace or re-surface the wooden board with surface that is durable, impervious to moisture, and can be cleaned (by January 2024).

Routine check.
Operator has Food Safe - check dates on certificates and renew before expiry date.
Coolers - satisfactory. Keep temperature records.
For food that is not always in the cooler but is potentially hazardous, bring out in small volumes - follow food safety plan.
Hand sink has hot/cold water, liquid soap, and paper towels.
Disposable gloves also used.
For work in bakery area, recommend an additional hand sink. In meantime, use hand sink in main kitchen area.
Food safety plan reviewed previously.
Quats sanitizer - see above.
Cleaning - see above.
Commercial dishwasher has a final hot water sanitizing rinse - check temperature gauge daily. Ok today (>180F on gauge and 160F measured inside of the machine).
