-All coolers at 4C or below
NOTE: Inserts for cook line coolers should only be filled half way & good should be used within 2 hours as area can get warm
-All freezer at -18C or below
-rice hot held above 60C
-Low temperature dishwasher available & registered at 100 ppm chlorine at final rinse on plates surface
NOTE: glass washer in kitchen is not in use and is waiting to be repaired
-Sink and surface sanitizer cleaner registered at 272 ppm DDBSA from dispenser (required range is 272 - 700 ppm DDBSA (without exceeding) when storing cloths in solution
-Ice machine is visible clean with ice scoops stored outside
-No signs of pest - pest control contract in place
-All foods stored 6 inches off the floor
